
Ok, enough stalling. I've been absolutely dreading this particular letter. Q was semi-difficult, U was a little hard to find, but X....X?!!! What freaking food starts with X, besides xanthan gum? And that isn't even a food, it's an ingredient! I could've taken the easy way out and just chosen a food that I love including xanthan, but I thought I'd try my best.
With everything going on though, I wasn't able to make it to the grocery store to buy all the necessary ingredients - it happens people - BUT I thought I'd share with you guys a recipe I found, that is a mock for the Dairy Queen "Chocolate X-treme".
I am a chocoholic, so when I came across this recipe I knew I had to share it - and eventually try it. I used to love DQ, but with my son's severe peanut allergy, I haven't dared to order anything from there. Seeing as how this is a mock recipe that is gluten free, sugar free, low carb, AND peanut free, there was no way I was passing this opportunity up. It was like a sign from the chocolate God's above.
This recipe was found on Briana Thomas's website and it's no wonder this recipe looked so good on Pinterest, she's a chef genius! She has quite a few mocks on her page and her photography makes everything look scrum-didely-umptious. I can't even begin to example to glory that is all over her page, so you'll just have to click the link above to check out this recipe and more.
In case you don't want to click over just yet and you're dying to see how to make this heavenly dessert, here is the recipe!
INGREDIENTS:
- 1 cup crushed ice
- 1 farm fresh egg
- ¼ cup unsweetened almond milk
- ¼ cup cottage cheese
- 3 doonks THM Pure Stevia Extract Powder, to taste (a doonk is 1/32 tsp.)
- ¼-1/2 tsp. glucomannan
- Scant ¼ tsp. baking powder
- ½ scoop vanilla whey protein powder
- Scant T cocoa powder
- 1 Fudgy Brownie (see link below)
- Chunks of 85% dark chocolate, unsweetened baker's chocolate, Lily's Chocolate Chips, or chunks of Skinny Chocolate (recipe can be found in the Trim Healthy Mama book)
DIRECTIONS:
1. Blend all but the last two ingredients together. If the "blizzard" is not thick enough for your liking, add some more ice.
2. Cut the Fudgy Brownie into small pieces (substitute at your own risk; this Blizzard needs chewy brownie pieces to taste authentic) and stir it and the chocolate chunks by hand into the shake.
Now, Briana mentioned that you could wash the egg with soap and water before cracking it, to avoid salmonella poisoning, and I don't know how it would taste without the egg, but I will tell you right now that I am going to do this recipe WITHOUT the egg. No offense to Briana and her amazing recipes, but I have an over-active imagination that likes to play mind games on me. If you are a brave soul, I would try it with the egg as mentioned above. I think Briana knows what she's talking about. I mean, she even has her very own cookbook now! I'm just choosing to go against the grain and not do exactly as I'm told. Call me a food rebel if you will.

I'm sorry for the lack of food sharing on my part. I've been so exhausted from having to do 6 loads of laundry today after the last few day's chaos. I didn't have a single minute to spare, but that doesn't mean I don't love you guys!
