Homemade TACO PIE for Pi Day!

Hello you wonderful people. This past weekend, we had a lovely picnic at the Japanese Friendship garden close by, added to our family by adopting thee most adorable Star Wars Tsum Tsum's EVER (check out my Instagram for their debut), and colored our hearts out. Overall it was extremely relaxing...until last night. I had suddenly realized it was going to be Pie Day, and knew I wanted to celebrate it with my little Padawan.

In honor of Pie Day, March 14th (3.14), I decided to make an un-traditional type of pie, since my son isn't a traditional "pie" person. Being the carnivores we are, I opted for a very simple Taco Pie, after searching for alternative, celebratory eats on Pinterest. This took me a total of 50 minutes, including prep time, to make and devour. It cost me about $19 and it can easily feed up to 4 people. 

Begin by rummaging through your pantry and refrigerator to see if you have any of the supplies on handy. If not, make a quick trip to your local grocery store. In the end, you should have:


-Caserole dish, iron skillet, or small baking pan
-1 lb. extra lean ground beef
-6+ Tortillas of your choosing (I went with flour)
-10 oz Frozen corn, thawed (you can choose whole corn, but you will have to pre-cook it)
-1 can diced tomatoes NOT DRAINED 14.5 oz
-1 Tbsp. chili powder
-1 whole onion, diced
-1 cup mexican cheese (I chose the mix of four cheese)
-Sour cream

Once you've gathered your supplies and have obtained an insatiable hunger for a delicious taco pie, you're ready to create and bake! 


Step 1: Heat your oven to 350 degrees (Fahrenheit)
Step 2: Brown your meat with your diced onion and chili powder in a large skillet on medium-high heat. 
Step 3: Once the meat is browned, add tomatoes and corn. Cook for 5 minutes or until everything is heated through. Only stir OCCASIONALLY.
Step 4: Grab your cast iron skillet, small baking pan, or casserole dish, and spoon approximately 1 cup of meat mixture, spreading evenly on the bottom. Cover the first layer with tortillas, overlapping if necessary. You want the entire first layer covered. 
Step 5: Add a second layer of meat (approximately 2 cups), topping with 1/2 cup of cheese. Cover the second layer with tortillas, making sure to cover completely. 
Step 6: Top off your pie with all the remaining meat and a little extra cheese. Top with a final layer of tortillas, again making sure to cover completely.
Step 7: Bake 25 to 30 minutes (or until heated all the way through). For extra delicousness, top with any remaining cheese you have, and bake an additional 5 minutes, for the cheese to fully melt. 

That's all there is to it! After you're baking is complete, simply pull it out of the oven, cut into slices, and serve with sour cream! It's absolutely mouth watering and delicious. My son and I ended up eating half the pie, which is great because now we have lunch for tomorrow!
